It seems to me that there are more and more small, local craft distilleries starting up and following trends started by craft beer, cider and mead. Small Farm Canada magazine will be covering the farm distillery trend in Canada later this year but couldn’t wait to tell you about one craft whisky maker called BEARFACE.
A whisky recently released by BEARFACE has the distinction of being infused with foraged BC mushrooms. The BEARFACE Wilderness Series includes the Matsutake edition with it’s self proclaimed “umami finish”.
Matsutake or pine mushrooms and their relatives, are found in North America (American matsutake), in Japan (Tricholoma matsutake) and British Columbia (Western matsutake). They are all considered delicacies.
