Food preservation is one of the oldest technologies humans have discovered.
Preservation was developed to extend the life of food and the amount of time we can keep it in storage. This is still just as important now as it was thousands of years ago. Preserving food can save it from spoiling, reduces waste and enhances and changes flavours and textures.
Pickling, preserving and fermenting has made a comeback in recent times as we seek to understand nutrition and at times control the ingredients in the foods that we are consuming.
It is also climate positive to work towards a waste free kitchen by pickling, preserving and fermenting excess produce and sharing and learning with each other.
