Another is infusions, you may have noticed examples like flavoured vodka already at your local liquor store. Infusions are made by soaking fruit, herbs or even veggies (hot peppers) in a spirit, infusing it with their flavour. These are most easily done with clear liquors like vodka and gin.
Muddling is another method of imparting flavour from herbs or fruit to a cocktail. In mojitos for example, fresh mint is the star of this classic cocktail. It is made by muddling (muddling tool) some mint leaves to infuse the drink with flavor and add more for garnish.
