Maple syrup is a Canadian specialty, through 2020 producers in Canada hit a record high of producing over 14.3 million gallons. COVID shutdowns and restrictions slowed the early season, but the industry bounced back with a strong performance to surpass our previous record of 13.2 million gallons of production which was set last year in 2019.
Quebec was once again the principle producer for Canadian maple syrup holding 90% of our national production. The reduction in festivals and cCarnivals reduced the profits for small maple syrup makers, but great spring weather helped all of Quebec’s producers and increased profits helping small and large producers alike.
Syrup prices fell in parts of Canada, but Quebec’s prices are provincially regulated, seeing no decline Quebec exported a large amount of their syrup providing one third of the global syrup supply. The pandemic caused some changes in the syrup industry’s processes but producers were able to protect their facilities and workers effectively and it didn’t hinder production.
So go ahead and make those pancakes!
