As the largest lentil producer in the world with over 80% of global exports, it is easy to see why our localvores and nutritionists alike recommend including more beans in our diet.
Approximately one million hectares of land is in lentil production in Canada. Saskatchewan accounts for more than 95% of the production. Red and green lentils are the main classes with over 35 different varieties registered.
