Vegetable Supreme
This is a recipe from my teenage years that I still love all these years later, enjoy!
Ingredients:
2 cups broccoli (florets)
2 cups cauliflower (florets)
1 medium onion diced
2 eggs (lightly beaten)
½ cup mayonnaise
1 can mushroom soup
1 cup sharp cheddar cheese (shredded) (1/4 cup in reserve)
2 cups prepared or homemade seasoned croutons
Directions:
- Heat oven to 350 degrees F.
- Cook cauliflower and broccoli (cut into florets) separately in boiling water until tender crisp. Remove from heat and drain.
- Add both drained cauliflower and broccoli to a casserole dish once blanched.
- Then add diced onion, 2 eggs that have been slightly beaten, shredded cheese, mushroom soup, mayo and ¾ cup shredded cheese to the casserole dish and combine.
- Add the croutons and ¼ cup of cheese to the top of the casserole and cook covered for 35-45 minutes.
- Uncover and toast cheese and croutons under the broiler for 2-3 minutes for extra browning on top.
