Staff member Denise says that until she found this Turkey Enchiladas recipe, she dreaded left over turkey.
Ingredients
- 1/2 Cup Cream Cheese - softened
- 1/2 Cup Sour Cream
- 2 Tomatoes, chopped
- 1 Onion, chopped
- chopped cilantro
- Pepper to taste
- 2 Cups left-over turkey, chopped
- 10 small tortilla shells (whole wheat)
- 11/2 cups salsa (spice level to your taste)
- 11/2 cups shredded old cheddar cheese
Instructions
Combine cream cheese, sour cream, chopped tomatoes, onion, cilantro, pepper, and turkey. Fill shells and place in a baking dish. (Can be made in advanced and refrigerated.
Cover with salsa and cheese. Bake in 350F oven for 30 minutes.
Serve with a side salad.
