Slightly tart Saskatoon berries hail from the prairies. Saskatoon is a Cree word for sweet, fleshy fruit. Is it true that the city of Saskatoon was named after the berry? No matter what the answer, Saskatoon berries make a great pie.
Ingredients
- Top and bottom pie 9 " pie shell
- 5 cups saskatoon berries
- 1/2 cup + 1 TBSP granulated sugar
- 3 TBSP cornstarch
- 2 TBSP Lemon
- 1 large eff beaten + 1 TBSP water
Directions
Preheat the oven to 350°F. Place the rack in the lower third of the oven. Line a baking sheet with aluminum foil to catch drippings.
Place the saskatoon berries in a large bowl and stir in the 1/2 cup sugar, lemon juice, and the cornstarch until well combined. Pour the berry mixture into the bottom of the pie shell.
Top the filled pie shell with top dough. Brush with the egg wash. Sprinkle with the remaining tablespoon of sugar. Place the pie on the prepared baking sheet. (If desired, you can freeze the pie at this point.)
Bake in the oven for 60 to 75 minutes.
