Nanaimo bars became popular after the 2nd world war when sugar rations were no longer in effect, and are a favourite because this dessert bar requires no baking, and consists of three layers.
Base crumb layer Ingredients
- 1/2 cup butter
- 1/4 cup sugar
- 5 tbsp cocoa power
- 1 egg
- 1 tsp vanilla
- 1&2/3 cups graham wafer crumbs
- 1 cup desiccated coconut
- 1/2 cup walnuts
Base instructions
- Grease a 9 x 9" pan
- Cook the first five ingredients over medium heat, stirring constantly, until smooth and slightly thickened, and then stir in the remaining three ingredients.
Middle Layer
- 1/4 cup butter
- 2 cups sifted icing sugar
- 1 egg
Middle Layer Instructions
- Cream butter, icing sugar, and egg until smooth.
- Spread over crumb base.
- Place in fridge for 15 minutes
Top layer ingredients
- 4 squares semi-sweet chocolate
- 1 TBLS butter
Top layer instructions
- Melt 4 squares of chocolate and butter in microwave until smooth.
- Spread on top middle layer.
- Refrigerate.
