By cooking forward, you can start the week with good nutritious meals and devote maximum time to work and play. By Wednesday leftovers are gone and temptation towards processed or fast foods starts -- just something to get over the hump.

Editor’s tip: For a cheesier taste, I added ¼ cup of ricotta and ¼ heavy cream during final stages of cooking. Leave out ricotta and cream to freeze.
