This Gingerbread Pear Upside Down Cake is a great ways to use up pears if they are starting to go soft. While it cooks for a while in the oven, prep time on this recipe is pretty quick.
Ingredients for "Topping"
- 2 TBSP Butter, Melted
- 1/2-Cup packed brown sugar
- 2 Pears, peeled and sliced (if you like thicker slides of pear on the cake, consider 3 pears, depending on size)
Cake Ingredients
- 1 Egg
- 1/2-Cup Granulated Sugar
- 1/2-Cup Buttermilk
- 1/4-Cup Butter, Melted
- 1/2-Cup Fancy Molasses
- 1&1/4-Cup Flour (white or whole wheat)
- 2-TSP ground ginger
- 1-TSP Cinnamon
- 3/4-TSP Baking Soda
- Pinch each of ground nutmeg and ground cloves
Instructions
- Pre-heat oven to 190C (375F).
- Spread melted butter in a 1.2-Litre (8-inch) cake pan; sprinkle with brown sugar. Arrange sliced pears, overlapping in circle to cover the bottom of the pan.
Cake preparation:
- In a bowl, beat egg, sugar, buttermilk, butter, and molasses.
- Stir together flour, ginger, cinnamon, baking soda, nutmeg, and cloves - stir into buttermilk mixture until just moistened.
- Pour over pears.
- Bake in 190c/375F oven for 50 to 55 minutes or until tester comes out clean.
- Let cool on rack for 15 minutes and then run knife around edge and invert onto serving platter. Serves 8.
