This recipe was shared by the BC Cherry Association to celebrate Canadian Cherry Month (Mid-July to Mid-August)
Ingredients
- 1 lb cherries
- 1 tbsp brandy or sherry
- ½ cup sugar
- ½ cup flour
- pinch of salt
- 1 ¼ cup milk
- 3 eggs
- (optional) icing sugar
Instructions
- Pre-heat oven to 425ºF.
- Place cherries (remove pits first) in the bottom of a greased deep pie pan or cast iron pan.
- Drizzle with brandy or sherry.
- Whisk together all other ingredients then pour over cherries.
- Place in oven and immediately turn the oven down to 375ºF.
- Bake for about 30 minutes, until it has risen and browned lightly.
- (optional) Sprinkle with icing sugar before serving.
Serve lukewarm and celebrate the flavours of a Canadian summer!
